Ingredients (for 6 people):
- 1 beautiful cut chicken (or only thighs depending on your preference)
- 3 to 4 shallots, chopped
- About 500 g button mushrooms, thinly sliced
- 1 tablespoon of bound brown stock (poultry or veal) diluted in 20 cl of water
- 50g butter
- 1 teaspoon of tomato paste
- Flour to brown the chicken
- A drizzle of olive oil
- Fresh chopped parsley
- Salt, pepper to taste
- Chopped chives or, for lovers, tarragon.
