Preheat the oven to 375°F.
Pour the melted butter in the centre of the 9 13-inch baking dish, do not spread the butter around the pan.
In another bowl, combine the flour, 1 cup of sugar, salt and baking powder.
Slowly pour in the milk and vanilla extract and mix well. Pour the dough over the butter, but do not stir.
Add the brown sugar, peach slices and lemon juice to a saucepan over high heat. Stir frequently until the sugar has completely melted and the peaches have released their juice.
Pour the peaches over the batter. Do not stir.
Bake for 40 to 45 minutes or until the top of the cobbler is golden brown.
Serve hot or cold, or with a scoop of ice cream.
