Glazed donuts with whipped cream

ingredients 

5 eggs
80 g of sugar
1 sachet of vanilla sugar
60 g of flour
60 g of corn starch
100 g of jam (apricot jam)
250 g of chocolate
250 ml of whipped cream

preparation

Beat the egg yolks with the sugar and vanilla sugar until frothy. Beat the 5 egg whites until stiff and carefully incorporate them into the egg yolk mixture. Mix the flour with the cornstarch and incorporate into the mixture (but not too much).

Fill an Indian mold (you can also use a baking tray, you have to cut out the donuts with a round glass) with the mixture and bake at around 180° for 15 minutes. Then remove from the mold and leave to cool. In the meantime, whip the cream with the icing sugar until stiff peaks form. Using a piping bag, pipe the whipped cream onto the bottom halves and line up the other halves. Cover the tops with apricot jam and pour the melted chocolate over them. (Melt the chocolate with a little milk until you obtain a thick consistency).
